I fell in love with Bufala Mozzarella a few years ago, and I love it even more now that I can buy massive quantities on the cheap at Costco. Yes, my love can be bought at a very low price. Bufala Mozzarella is made from the milk of domesticated water buffalo. Though I thought it was only produced in Italy it turns out that folks have bought herds of water buffalo and are producing the cheese all over the place (I haven’t seen any in West LA – but stranger things have happened). If you want the real Italian buffalo mozzarella you have to look for the “Mozzarella di Bufala Compana” trademark on the product. It’s a bit like Parmesan Cheese. Anyone can call their cheese “Parmesan” but only certain producers can call their cheese “Parmigiano-Reggiano.” I’ve tasted both and although the one with the trademark is superior, many of the others are quite good. The one sold at my Costco is, in fact, the real deal! Once I became addicted to Bufala Mozzarella I had to figure out more than one way to eat it (straight out of the plastic container seemed a bit pedestrian). This simple salad satisfies my Bufala addiction and looks quite elegant despite the fact that it only has four ingredients.
Bufala Mozzarella Salad (4 small servings)
- 1 lb Bufala Mozzarella (4 balls), sliced medium thickness
- 1 lb grape tomatoes, cut in half
- 1 cup Everyday Salad Dressing (from this blog, or your favorite vinaigrette)
- 1 tablespoon purchased olive tapenade
Wisk together the vinaigrette with the olive tapenade in a medium bowl (or put it in a blender if you like it really smooth). Lay three mozzarella slices on a salad plate. Place the sliced tomatoes next to the cheese. Drizzle the salad dressing over both the cheese and the tomatoes. Serve.
