This bread is beautiful and tasty, a fantastic combination.
Mixed Berry Almond Quick Bread (two 9×5 loaves)
- 1 cup unsalted butter softened
- 1 ½ cups sugar
- 1 tablespoon almond extract
- 2 teaspoons freshly squeezed lemon juice
- 4 eggs
- 2 cups unsweetened applesauce
- 1 cup sour cream
- 1 teaspoon salt
- 3 cups all-purpose flour
- ½ cup almond meal
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 cups mixed berries (mine were TJs frozen blueberries, strawberries & blackberries)
- 1 tablespoon sugar
- 2 tablespoons Amaretto
Preheat the oven to 350 degrees. Butter and flour two 9×5 inch loaf pans.
In a medium-sized bowl mix together the frozen berries (or fresh if you have them), the 1 tablespoon of sugar and the Amaretto. Allow the berries to sit out for at least 20 minutes. If there are really large berries in the mix chop them up into chunks. If you use the TJ’s frozen berry mix you’ll just need to chop the strawberries and the blackberries.
In the bowl of a stand mixer cream together butter and sugar. Once it is creamy add the almond extract and the lemon juice. Add the eggs, one at a time. Break your eggs into a separate bowl before you add them to the batter. Why? ‘Cause every once in a while you’ll come upon a bad egg and you don’t want to discover it AFTER you’ve added to the butter and flour. I know some of you WILD risk takers are going to just dump those eggs straight into the butter/sugar mixture. Don’t come crying to me when you come across that one nasty, totally rotten egg… I’ll just say, “I told you so.”
With the stand mixer running add in the applesauce and the sour cream. In a separate medium-sized bowl whisk together the salt, flour, almond meal, baking soda, and baking powder. Once you have the dry ingredients blended add them to the rest of the batter in three additions. I find this is much easier to do in a big bowl rather than the stand mixer. My mixer just isn’t big enough. Very gently fold in the berry mixture including any berry juice that has accumulated on the bottom of the bowl.
