Banana Chocolate Chip Muffins

Easiest muffins. Ever. It takes me longer to brush my teeth than it does to make these muffins. Maybe it’s the braces. But even still – these are speed muffins.

Banana Pear Chocolate Chip Muffins (makes 12 muffins)

  • 1 cup all-purpose flour
  • ½ cup white wheat flour
  • ½ cup sugar
  • 1½ teaspoons cinnamon
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup mashed ripe bananas
  • ½ cup mashed ripe pear (or buy pear sauce at TJ’s – like applesauce but pear)
  • 1 large egg, lightly beaten
  • ½ cup (1 stick) unsalted butter, melted
  • ¼ cup buttermilk
  • 1 teaspoon vanilla extract
  • ¾ cup best quality semisweet chocolate chips

Preheat oven to 350°F.

Line twelve ⅓-cup muffin cups with muffin liners.

Whisk together all-purpose flour, white wheat flour, sugar, baking powder, baking soda, cinnamon and salt in large mixing bowl. Mix mashed bananas, mashed pear, egg, melted butter, milk and vanilla in medium bowl.

Stir banana mixture into dry ingredients just until blended. Stir in chocolate chips.

Pour batter into muffin cups – they will be full almost to the very tippy top. Bake muffins until golden and a tester inserted into center comes out clean (except if you hit a big chocolate chip, in which case you’ll have melted chocolate all over your tester), approximately 30 minutes. Eat muffins warm, straight out of the oven. Have a cup of coffee too. Put your feet up. Live a little.
