I now carry around scraps of paper and scribble down recipes I need to try. Some people write down movie ideas. I write down salad dressing. Sometimes the scrap gets shoved in the corner of a book, or a pocket in my purse. I’ve been carrying this one around for a while. I have no idea when I wrote it down but I was spot on. This is delish.
Green Olive Cotija Salad Dressing (makes 2 ½ cups)
- 1 shallot, coarsely chopped
- 1 clove garlic
- One 6-oz jar pitted green olives, drained
- ¼ cup white wine vinegar
- 1 cup olive oil
- ¼ cup cotija cheese
- 2 teaspoons salt
- 1 tablespoon freshly squeezed lemon juice
Place the shallot, garlic and olives at the base of your blender. Add all of the other ingredients. Process until smooth.
This dressing will keep in the fridge for a week.
